Ingredients for rose petal jam : 250 grams of red rose petals (organic and pesticide-free), 250 grams of sugar, the juice of one lemon, 3 tablespoons of water, 3 tablespoons of rose water.

Remove the white part of the rose petals, which has a bitter taste. Wash the petals thoroughly in cold water to remove all impurities, then dry them thoroughly and let them dry.

Place the dried petals in a container with the lemon juice. Squeeze the petals well, trying to mix them as much as possible with the lemon juice. Let sit for one hour.

Place the sugar, water, and rose water in a saucepan over low heat. Finally, add the rose petals and lemon juice, stirring constantly until boiling.

Once reached, reduce heat and simmer for about an hour.

Bring the mixture back to a boil at least 3 times during the cooking time. This will help you achieve better caramelization. Once you achieve a caramel consistency, remove from heat and let it sit for 20 minutes.

Store the jam in well-cleaned and sterilized glass jars.
