How to Preserve Pomegranate for a Year: The Infallible Methods

Whether you want to enjoy pomegranate fresh, frozen or in the form of juice, there are many ways to preserve it and enjoy its flavor all year round. By following these simple methods, you will always have the special touch of pomegranate to enrich your recipes, even out of season.

Pomegranate is an autumn fruit loved for its sweet and juicy seeds, perfect for enriching dishes and desserts. But what to do when we have plenty of it and want to preserve it for a long time? With the right precautions, it is possible to keep pomegranate fresh and usable all year round.

1. Store in the refrigerator

If you don’t need very long-term storage, the refrigerator is a practical and effective solution.

Whole: Store the whole pomegranate in the crisper drawer, where it will stay fresh for up to 2-3 months. Make sure the fruit is whole and free of bruises. Seeds: Separate the seeds from the fruit and place in an airtight container or freezer bag. The seeds will stay fresh for up to 2 weeks.

2. Freezing the grains

Freezing is the best method to preserve pomegranate seeds for a whole year, keeping their properties intact.

  1. How to:
    Open the pomegranate and separate the seeds, removing any remaining membrane.
    Dry them gently with a cloth or paper towel.
    Arrange the seeds in a single layer on a baking sheet lined with parchment paper and freeze them for about 2 hours. This step will prevent them from sticking together.
    Transfer the frozen seeds to a freezer bag or an airtight container.
  2. Use:
    Frozen kernels are perfect for smoothies, salads, desserts or as a garnish for savory dishes.

3. Drying

Another method to preserve pomegranate for a long time is to dry it.

  • Procedure: Separate the kernels from the fruit and place them on a baking sheet lined with baking paper. Dry the kernels in the oven at a low temperature (50-60°C) for 4-6 hours, turning them occasionally. Store them in an airtight glass jar, in a cool, dry place.
  • Shelf Life: Dried kernels can last several months and are great for use in granola, salads, or as a snack.

4. Juice preparation and storage

Pomegranate juice can be extracted and stored in sterilized bottles throughout the year.

How to do:

  1. Squeeze the beans using a juicer or extractor.
  2. Pour the juice into sterilized glass bottles and seal them tightly.
  3. Store the bottles in the freezer or pasteurize the juice to keep it at room temperature for a long time.

5. Alternative methods: vacuum

If you have access to a vacuum sealer, you can vacuum seal the beans or whole fruit. This method slows down oxidation and allows for a longer shelf life than simple refrigeration.
