Ingredients
For the base
2 large eggs
220 ml (1 cup) milk
3 tablespoons (45 g) all-purpose flour
2 tablespoons (30 ml) olive oil
80 g (¾ cup) grated Parmesan cheese
Vegetables
1 medium head broccoli (about 300 g/10.5 oz), cut into florets
1 medium zucchini (200 g/7 oz), trimmed and sliced
1 large carrot (120 g/4 oz), peeled and chopped
1 bell pepper (150 g/5.3 oz), diced
1 medium onion (150 g/5.3 oz), finely chopped
Coverages
100 g (3.5 oz) light mozzarella, cut into cubes
Salt and freshly ground black pepper to taste
2 tablespoons fresh parsley, chopped
Procedure
- Prepare the vegetables
Wash all vegetables well.
Cut the broccoli into small florets.
Peel and cut the carrot into small pieces.
Cut the zucchini into thin slices, the pepper into cubes and the onion into small pieces.
In a large skillet, heat a tablespoon of olive oil and sauté the vegetables for 5-7 minutes until tender. Remove from heat and set aside. - Prepare the base
In a bowl, beat the eggs and add the milk.
Add the plain flour and mix well until you obtain a homogeneous dough.
Add the grated Parmesan cheese and a pinch of salt and pepper. Mix again. - Cook the pizza in a pan
Heat a large nonstick skillet over medium heat and add a tablespoon of olive oil.
Pour the base mixture into the pan and spread it evenly.
Cook over medium heat for 5-7 minutes until the base begins to set. - Add the vegetables and toppings
Spread the sautéed vegetables over the pizza base.
Add the cubes of light mozzarella on top.
Cover the pan and simmer for a further 5-10 minutes, until the mozzarella has melted and the base is fully cooked.
